I'm just pissed because they have signs going in one direction on that walkway but not the other. If they really want to avoid a lawsuit or whatever, they should have it outside all of the doors and walkways. I personally do NOT want to appear on screen in their movie, and if I make it into a shot, I'll flash the cameras if I realize I'm on screen, or else I'll sue the company once the film is out if I see myself on it. I can't stress enough how much I do NOT want to be in it.

It's probably not legally binding, but it probably doesn't have to be anyway. It's not like they came to your house and filmed you. Things you do in public (or technically here, private property, but not yours) are public.
This is absolutely correct. Walking past a sign like this in no way manifests assent to any form of a contract, but no contract is needed. In the US, generally, there is no need for permission to reuse a person's likeness in any manner the cinematographer sees fit, so long as another crime or tort isn't committed (e.g., defamation, trespassing, copyright infringement). Generally, photographers and film studios like to get permission, to head off any later claims of defamation, but for this kind of situation where they may catch you on film casually walking in the background of a scene, there is no legal obligation of any kind.
